Can you go strictly vegan for one full day?



Challenge 1-How difficult is it to be a vegan? Now that you've seen Cowspiracy, try out a healthy, vegan diet for one full day, based on veggies, fruit, whole grains, and legumes. Comment on your experience, noting what you ate and how you felt. Tweet a pic from your experience to #esslove!

  1. My experience of eating a strict, healthy vegan diet for one full day was very positive. The most challenging aspect of this for me was that I needed to stick to a healthy, plant based vegan diet as opposed to someone who could just eat pita bread with peanut butter, white rice, and vegan cookies all day and still be a vegan. So to try and achieve this, I had to do a lot of planning and thinking beforehand about what I wanted to eat, how I was gonna prepare it, and ensuring I was going to get adequate nutrition from what I ate. So just to recap what I ate, in the morning I had a bowl of oatmeal with dried cranberries and sunflower seeds, then for lunch I had a spinach salad with raspberry vinaigrette dressing and almonds on top (I did miss the feta cheese I would usually have had with this but it really wasnt that big of a deal), for an afternoon snack I had a big bowl of raspberries, strawberries, grapes, cantaloupe, honeydew and mango, because fruit salads are my favorite food ever, and finally for dinner I ate another spinach salad and I also had a green juice to go with it, which was made with kale, celery, cucumbers, lemon, and an apple. I used to make green juices all the time last school year so it was really fun to get back into it and I actually think they taste really good! So overall, my one full day of eating a strict, healthy vegan diet was very enjoyable and I would certainly consider trying it again in the future.
